This dish is simple but oh so delicious. If you are not a fan of coriander then you can use dill, if you are not a fan of dill or coriander just use parsley instead.
Green Beans with Cumin
Ingredients
- 200g green beans
- 1 carrot
- 1 tsp cumin
- splash of sunflower oil (organic)
- a big handful of coriander, leaves removed from the stalk
Method
Cut the tops off the beans, leaving the tail. Peel and Julienne the carrots then steam the carrots and beans for 5 to 10 minutes. While they are steaming heat the oil in a frying pan and fry the cumin seeds for a few minutes (avoid burning as they taste too bitter). Mix the green beans and carrots with the cumin and then fold in the coriander. A great side for any meal and wonderful eaten cold too.
