Dragonfruit smoothie bowl
Ingredients
- ½ pumpkin
- 2 splashes of olive oil
- 2 medium zucchini
- 200g mushrooms
- 200g Nimbin Valley Cheddar grated
- 250 g Nimbin Valley Haloumi Cheese cut into small cubes
- pinch salt
- few good twists of fresh pepper
Method
Cut the pumpkin into 1 cm slices, remove skin and bake in the oven with the oil. Cut the zucchini into thirds then make slices and steam them. Fry the mushrooms in the remaining splash of oil. Once pumpkin is cooked place in a baking dish (one that you can also serve from on the table) and then layer half of thecheese followed by the steamed zucchini and mushrooms. Layer on the remaining cheese and sprinkle on the haloumi. Bake in the oven for 20 minutes or until the haloumi has browned a little.
This recipe will serve 4 to 6 with a salad or steamed beans
